Done a lamb curry last month.
I browned the lamb first and cooked the onion and pepper till soft. The lamb ended up like shredded lamb. Cooked for 6/7 hours.
    1kg diced lamb
    1 tin chopped tomatoes
    Paprika
    Cummin
Curry powder (hot/med/mild) which ever you desire
    1 veg stock
    Garlc salt
    2 onions
    1 red pepper

Absolute peace of piss and all ingredients in cupboard anyway.

Even throwing in a whole chicken, 500g spuds (if you have a large cooler) and some carrots tastes great with some chicken stock. Chicken just falls off the bone.
Then use the stock for a soup - easy way to get veg into the kids diet too.

Made this today & it was great

    500g pork fillet
    1/4 a chorizo
    2 peppers
    1 onion
    1 chilli
    1 tin toms
    1 tin beans
    400ml of stock

Chop the meat & veg then stick it all in slow cooker. Cook for 4 hours with lid on then 2 without to reduce the sauce.

I'm starting out so I'm just doing simple stuff right now.

Pork & barbecue sauce for my pulled pork sandwich,
Beef stew: just put in the meat with thyme, ginger and spices you like
