i enjoy cooking but what i cook depends on the season .

obviously mediterranean recipes are my specialties .

i really enjoy kleftiko with a good wine .

ingredients are :

lamp ( or the meat of your preference )

veggies ( i prefer all colours of peppers , tomato , celery )

hard cheese

all cut up in cubes

mix them up add salt , pepper , oregano , spearmint and olive oil .

for convenience throw everything in one of those baking bags and bake for an hour an a half .

bon apetit !

Interesting! It just really hard to get a lamb in the oven. They don't seem to like it :)

Useless bint!

I had paella for the first time ever about a week ago and it was amazing. Im not a massive fan of seafood but it  was sublime. Does anyone have a good recipe for it?

seafood paella :

simmer with olive oil in a wok choped onions and garlic until golden

chop up veggies of your preference ( again , i prefer seasonal ones and many  types of herbs )

eg , carrots , eggplants , tomatoes , asparagus , spearmint, coliander etc

add those to the wok . when simmered and start to boil , add a bit of water ( no need for too much as depending on the veggies you use they will be adding their juices ) and a cup of  rice - previousy rinsed .

sat and pepper if you like , add the seafood clean ( obviously ) 5 minutes before rice is done cooking  .u will spoil the seafood if overcooked -

i prefer a chilled  glass of chardonnay with it !

What about stock though Anna?

The guy who made the awesome Paella actually made it with chicken stock. Sounds crazy but it was to appease the guests who weren't massive fish fans. I could ask him for the recipe but that would be admitting that he is a better cook them me. He is without doubt but I refuse to tell him that!

u could use it but i dont see the need for artificial flavoring .

what you could do is previously boil slightly all your seafood adding laurel leaves in the water  and whole pepper grains of different colours . remove the seafood and keep the broth . add this instead of water
