Cevapcici with tomato rice for 4 people
2 red onions
1 red bell pepper
2 tablespoons tomato paste
400ml vegetable stock
4 tablespoons oil (for frying)
200g basmati or long-grain rice
3 cloves of garlic
½ bunch parsley
600g minced meat (half + half or beef)
1 egg
3 tablespoons breadcrumbs
First, we chop the onions and fry them lightly in olive oil. We give half of the fried onions in a bowl first, where we later add the minced meat. To the onions in the pan, we still give to the chopped peppers. We then add the tomato paste and fry for it easily, but do not burn. Now we add the vegetable broth, and the cooked rice and stir it.
In the bowl where we have previously purely the chopped onions, we will now add the chopped garlic cloves and mince. In addition, we add an egg and breadcrumbs. Now we sprinkle with paprika, salt and pepper and knead everything together into a mass. From the mass Now we build about 7cm long cevapcici, which we then put on the grill for about 25mins or in the oven.
Finally, we put everything on a plate and have a decent Balkan specialty.
