Make chicken more exciting

Knor Aromat is a great all round seasoning..
 
nandos garlic peri peri - low in calories, tasty, spicy

light choices or eat smart caesar dressing - super low ckals. all supermarkets have their own version

schwartz seazoning - the spicy italian and steak ones are really good. not that keen on the chicken one
 
sometimes i chop up an onion, tomato, chilli and a pepper all really fine and mix that through the rice with some salt n pepper
 
This recipe is super easy and is one of my favorites.

Peanut Butter Chicken (real original right?)

Makes 2 servings

2 Bone in chicken breast halves (about 10 oz. each) - This is what the standard recipe calls for but you can use any kind of chicken, however the bone in helps add flavor and tenderness
1/2 cup nonfat plain yogurt or Greek yogurt
2 tablespoons creamy peanut butter
1/8 teaspoon ground red pepper
*Optional Items
*A few drops of siracha
*1/8 teaspoon (or less) of Asian 5 Spice Seasoning
*Sugar free sweetener (splenda of stevia) to taste

Preheat oven to 375 degrees F. Line baking pan with heavy foil.
If the chicken has skin, remove the skin.
In a small bowl, blend yogurt, peanut butter, pepper and any optional ingredients until smooth.
Dip chicken in the mixture to coat evenly and arrange pieces, rib side down (if the have bones), in a single layer on the prepared pan.
Bake on the top shelf of the over for 35 to 45 minutes, or until the chicken is richly brown and juices are clear when the breast is punctured with a fork.
You may serve either hot or cold. Enjoy!

Calories: 350 kcal
Protein: 49g
Carbs: 9g
Fat: 13g

I prefer to make mine with fat free Greek yogurt and use boneless skinless chicken breasts. Sometimes I add a little coconut oil if I am so inclined :)
 
Schwartz no added salt seasoning. There are about 5 or 6 different ones. I use this witha little olive oil, lemon or lime. Sometimes add some honey or a little brown sugar.

Rub any of the above in to the chicken. Cover with clean film and bash witha pan to around 2 cm thick then pan fry for 2-3 minutes each side. Very quick and tastes great too.

Another I like is to make a parcel out of tin foil inside is some seasoning, olive oil and lemon. Lay the chicken on a bed of veg and cook in oven.

Or I boil the chicken in different flavoured liquids.

If yu have a little more time. Cut a slit into the breast and stuff it with feta and spinach. Bit of lemon zest over the top and then wrap in Parma ham and bake.
 
If you are after a chicken and rice dish, this colemans season and shake bag is a piece of piss to make and tastes amazing - strongly reccomend. Ive tried brown and white rice in the bag as well.

Thanx for all ur ideas, I shal refer back to this before I go food shopping :-) cutting out salt too due to water retention
 
Anyone got any nice ideas of sauce I can have with my chicken, I usually have a stock cube n water or gravy, getting a bit bored of it now :-/

i sprinkle "season-all" or "chicken seasoning" and hot pepper sauce..........or if i aint cooking KFC :)
